Local Butcher Showcases Steamboats Agricultural Production

Steamboat’s agricultural production has found a new outlet, in the form of the recently opened MEATBAR. The one of a kind venue located on the west side of town, is owned by Laura Posiak – better known locally as Laura the Butcher. Posiak, a recent transplant from the east coast, grabbed local attention when she butchered half a pig during last year’s Steamboat Food and Wine Festival. “I want to shape how people see meat and bring new ways of enjoying meat into their lives.” Posiak said.

To her, butchery is an art form that has lost its way in a commercialized industry. When she and her husband moved to the Yampa Valley, she quickly found like-minded producers in the agriculture rich community. “I have the chance to help showcase the incredible mix of suppliers we have here,” she said. Until now, her reputation has been built on her signature charcuterie platters, which spill with the likes of Iberico chorizo, jamon Serrano, 12-month Manchego cheese, teardrop peppers and persimmons, served on personalized wood boards. Posiak plans to offer a reservation-only supper club, weekly butchery, and charcuterie classes. MEATBAR will also be available for private party rentals.
